Beef Fillet Steak is the most tender muscle on the whole body of Beef. The fillet muscle is so tender because it does the least work & is situated inside the carcass underneath the Sirloin in the hindquarter. It is also a very lean cut with little fat inside the muscle. This means it doesn’t have quite so much flavour as other steak cuts do. Fillet steaks are traditionally cut a bit thicker than other steaks, about 4cm.
